Traditional Food created with the wisdom of ancestors for thousands of years, Salted Seafood


Since old times, South Korea, which was surrounded by water on three sides, had been rich in seafood, but due to its poor transportation network, it had been difficult to distribute fresh seafood to inland areas in the country. It had developed the salting culture for preventing seafood from going bad and keeping it fresh, which had created the traditional food ‘Salted Seafood’.

Salted Seafood with the wisdom of ancestors for thousands of years is food which needs patience to care for a long time because only ripening and fermentation can make the use of its unique flavor and palatable taste. Due to its salty palatable taste, it is called a rice thief the way it is, but it is also all-purpose food which is widely used to prepare kimchi or season other food.

We met BYUNGJUN JUNG, the representative of Bukha Teugpum Sa-eobdan Co., Ltd., who is trying to introduce the taste of Korean traditional food to the world with salted seafood.

Bukha Teugpum Sa-eobdan Co., Ltd. is an agricultural corporation which was established by around 10 households in Yaksu-ri, Bukha-myeon, Jangseong-gun in 1990 as part of income increase in the rural community in order to produce and sell traditional food and specialties. Starting from persimmon vinegar and persimmon leaf tea using persimmon, the specialty of Jangseong-gun, currently, the company manufactures about 40 kinds of traditional food such as pickles, Kimchi, sauces, salted seafood, etc. It stably receives high-quality agricultural products through contract cultivation, and it adheres to a naturalistic method of manufacturing products manually with the taste of masters which has been handed down for 30 years, which is the company’s characteristic.

It exports products mainly to 5 countries such as the United States, Canada, Japan, etc. and its annual sales are 3.47 billion won as of 2021, of which exports are 1.73 billion won (about 1.27 million dollars). In the country, it sells products through a wide distribution network such as online open markets, its own shopping mall, etc. as well as major department stores and big marts. In addition to 3 types of patents and 6 types of trademarks regarding the manufacturing method, it is an accredited company which has all kinds of certifications including 12 product certifications and 22 types of corporate certifications which guarantee food safety and taste such as international certifications including ISO 22000, FSSC 22000, Halal certification, etc., K‧FISH certification, Traditional Food Certification, Jeollanam-do Governor Quality Certification, Namdo Mihyang Certification, Hi-seoul Award, etc.

Healthy Meeting of Seafood and Domestic Agricultural Product, Seasoned Pollack Roe with Red Pepper Sauce


The K·FISH-certified product of Bukha Teugpum Sa-eobdan Co., Ltd. is seasoned pollack roe with red pepper sauce. ‘Samchae’, the specialty of Jangseong, is a vegetable with three tastes (sweet, bitter, spicy) from a combination of ginseng, garlic, leeks, green onion, etc., which is known to work on all kinds of adult diseases including anticancer treatment, anti-aging, diabetes and high blood pressure control, etc. The company produces most of the products including seasoned pollack roe with red pepper sauce with the patented technology ‘ the method of making salted food and pickled fish using samchae soaked in persimmon vinegar’. It cleans up fresh pollock roe, mixes it with samchae powder, sauce and red pepper power made of Jangseong agricultural products and ripens it at a low temperature for more than 2 years for deep flavor and palatable taste. Because it does not add preservatives or artificial additives, it pays special attention to a ripening and storage process.

“Samchae has a strong taste, so raw materials are added, and the original flavor of salted pollack roe is reduced. We produce pickled fish by freeze-drying and pulverizing samchae and making seasoning with our patented technology. There are a lot of pickled fish products with sliced garlic on the market, but samchae contains more than 6 times dietary sulfur ingredients than garlic. We use freeze-dried samchae instead of garlic to increase nutrition, make the best of the flavor of pickled fish itself and add more original materials as much as the reduced garlic weight, improving customer satisfaction.”




Taste of Masters which has been handed down for 2 generations from mother to son


The company’s moto is ‘Home-made Side Dish made by Mother’. It is because the company started from the taste of the president MYUNGAE OH, who is the mother of the representative BYUNGJUN JUNG. The representative who had worked in the large construction company after graduating from university had helped his mother from time to time and both she and seniors in the village had heavily depended on the knowledge and energy of the young man. Judging that traditional food has a high future value and a great potential for development, he left the company and returned to his hometown to succeed to his mother’s side dish business.

Although there have been lots of difficulties from a young age and lack of experiences, he has enthusiastically taken care of fields every day while thinking “Don’t deceive myself and others. If I have a respectable day, it will make my way.’and has honestly made side dishes with the thought that my family will eat them. Furthermore, with ambition to break away from the fixed image of a traditional master and differentiate his products from other products with a young sense, he has launched a brand named Master Byungjun and made efforts to make a recipe with an experimental spirit and embody practical products which can be attractive for customers. As a result, he was selected not only as the youngest master in the Intangible Cultural Heritage Salted Food Field in 2020, but also as a new-knowledge farmer in the next year, a 100-year-old small-sized company, etc., which shows that he has been recognized for his long-time efforts and achievements.

‘Prepared Export Company’armed with All Kinds of Certifications and Patents


The biggest strength of Bukha Teugpum Sa-eobdan Co., Ltd. as an export company is that it has all kinds of domestic and foreign certifications which guarantee food safety. All products in the company are produced in compliance with SO 22000 and FSSC 22000, the Food Safety Management System Certification, and they are required to pass standards for pre-license inspection a month in order to do business with domestic and foreign large distributors, so the company conducts food safety management more strictly and perfectly than any other company.
